3 Cups cold mash
2/3 Cup Grated cheese ( i used parmesan and feta as its what i had)
2 Tablespoons spring onion (optional)
1 egg beaten
8 slices Ham, diced
3 Tablespoons flour, plus 1/2 Cup Flour
vegetable oil for shallow frying
In a large bowl stir together mash, cheese, spring onions, egg, ham and 3 Tablespoons flour. Divide mixture into 12 patties. Place remaining flour into a shallow dish, coat each patty in flour.
Heat oil in a large saucepan over a medium heat. Fry the pancakes in batches until golden brown and crispy. Transfer to a paper towel lined dish and serve immediately.
