Going thru my pantry i came across some ripe banana's, and what else to make than a nice loaf of banana bread. A quick cake/bread that's perfect for the kids to help with (Lelah loved mashing the bananas). Ingredients:
1 3/4 Cups Self Raising Flour 1/4 teaspoon Bi-Carb Soda 1/4 teaspoon Salt 1/2 Cup Castor Sugar 2 Eggs 1/4 Cup Buttermilk 75g Butter, melted 3 Bananas, Mashed Method: Preheat oven to 180'c. Grease and line a loaf tin. Sift flour, bi-carb soda and salt into a bowl. Mix in sugar. In another bowl beat eggs, stir in milk, butter and bananas. Mix wet ingredients into dry ingredients, stirring until just combined. Spoon into your prepared loaf tin and bake for 45-55mins. Leave in the tin for 10mins after cooking before turning onto a wire rack to cool.
