We all love a good prawn toast right? but we all have those really fussy kids who don't like prawns? well problem solved! Chicken toasts are absolutely delicious and awesome at disguising chicken. Super simple and a great treat for the kids (and adults) for an arvo snack or even if you need to take a plate to a party. Ingredients:
1 Large Chicken Breast, chopped roughly 1 Egg 1/2 teaspoon Lemon Pepper 1 Spring Onion, chopped roughly 40g Butter, softened 8 Slices of bread Method: Preheat oven to 180'c. Line 2 baking trays with baking paper. Place chicken, egg, lemon pepper and spring onion in a food processor, process for 30secs or until mixture is smooth. Spread butter over one side of the bread. Spread chicken mixture over the other side. Cut off crusts and cut each slice of bread into small triangles . Place triangles on baking tray and bake for 15mins or until golden and slightly puffed. Note: If you do want to make prawn toasts swap chicken for 375g Prawns (peeled and deveined of course).
