Fish cakes are a awesome way to get kids to eat seafood. I generally use a white fish like snapper, but this would be great with tuna or salmon. Ingredients:
500g Potatoes 1 Fillet Fish 1 Small Onion 1 teaspoon Dill 1 teaspoon Lemon Rind 20ml Lemon Juice 2 Eggs 40ml Milk 1/2 Cup Flour 2 Cups Breadcrumbs Oil to fry Method: Cut potatoes into rough chunks, boil in salted water until tender, mash till smooth (I used a potato ricer for this) cool in a large bowl. Cook fish and flake, add to potatoes with onion dill, lemon rind and juice and season with salt and pepper. Mix well and form into 8 patties. Put in the fridge for 30mins (their easier to work with when their cool). Beat together eggs and milk in a bowl and place flour and breadcrumbs in separate bowls (for crumbing). Dip each patty into the flour, then egg, then breadcrumbs. Repeat for each patty. Heat oil in a saucepan over a medium heat, add patties and fry both sides until golden brown. Serve with a dollop of mayo.
