A tasty mac 'n' cheese that's simple but delicious. This is a great recipe for any leftover bits of cheese that you have in the fridge. I used in this recipe mascarpone, tasty and parmesan cheese as thats what i had, but feel free to experiment with what you like. Ingredients:
400g Pasta 50g Butter 50g Flour 2 Cups Milk (my need more depending how thin you want your sauce) 4 Slices Bacon, cooked and diced (keep the bacon fat) 2 Cups Cheese (can be any cheese you like) 3 Tablespoons Mascarpone cheese Method: Cook pasta in a large pan of boiling water until just cooked. Meanwhile, melt the butter in a medium saucepan and add the flour. Cook stirring for 1 minute. Gradually add the milk, stirring until smooth. Add in Bacon and rendered bacon fat. Stir until sauce becomes thick and creamy. Remove from the heat, add the grated cheese and stir until melted and smooth. Drain pasta and add to cheese sauce, Stir thoroughly and serve.
