This is my special quiche i make when we need something to snack on thru the day or if i dont want to cook dinner later it's there ready to heat up. I make my own pastry for this as well i think it tastes way better. check the shortcrust pastry recipe on my blog for the recipe.
Ingredients: 1 quantity Shortcrust pastry (see recipe on blog) Knob Butter 1 onion, chopped 5 slices bacon, chopped 1 Teaspoon Garlic 4 Eggs 150ml milk 150ml cream Method: Preheat oven to 200'c roll out pastry and line quiche case, place in fridge to chill while making the filling. Melt a knob of butter in a frying pan and add onions and garlic cooking them till transparent. Place aside. Add bacon to frying pan and fry until cooked. Add back in onions and garlic and turn off the heat. In a bowl mix eggs, milk and cream together. Get pastry out of the fridge and prick with a fork over the bottom of the case. Add onion mixture to the case and spread evenly. Pour over egg mixture and bake for 35mins until filling has set.Remove from case and cut into 4-6 pieces.
