Oil for deep frying
Salt and Pepper
Peel and chop the potatoes into fine matchsticks. Place into a bowl of cold water (shake em around a bit to release the starch).
Heat oil (when you can place a cube of bread in it and it frys straight away its ready). Drain the potatoes on paper towel and dry thoroughly. Place small batches of chips into the oil and fry for 3-5mins until crispy. Drain on kitchen paper and continue process until all chips are cooked. season with salt and pepper and serve.
