You may be wondering what a 'snickerdoodle' is? so did i when i firt heard about them a few years ago. Basically they are a cookie/biscuit type of thing coated in cinnamon sugar! They are so soft and fluffy and delicious. A simple recipe which never fails. Ingredients:
85g Butter, softened 175g Caster Sugar 1 Egg, beaten 1/2 teaspoon Vanilla Paste 250g Plain Flour 1 teaspoon Baking powder 3 Tablespoons Sugar 1 Tablespoon Cinnamon powder Method: Preheat oven to 180'c. Line 2 baking sheets with baking paper. Beat butter and caster sugar in a bowl until pale and creamy. Gradually beat in egg and vanilla. Mix in flour and baking powder until you get a smooth dough. divide dough into 24 balls. In a separate bowl mix sugar and cinnamon. Roll each ball in cinnamon sugar and place onto the baking tray. Flatten each ball slightly with your finger and bake for 12-15mins or until golden. Cool before eating.
