Tomato passata is one of those fantastic sauces that makes the world a better place! When i first saw on telly the nonna's slugging over a pot of ripened tomatoes chatting away, i knew that i needed to give it ago! Basically passata is a tomato sauce using ripened tomatoes, basil, onion and love. I use my passata attachment on my kitchenaid as it separates the juice from the seeds and skins. Here is my recipe for a perfect passata which you can use in any dish or simply just over pasta. Ingredients:
15 Large tomatoes, halved 1 Large Red onion, chopped roughly 2 tbls Olive oil 4 garlic cloves, chopped Handful Basil, chopped roughly Handful chives, roughly chopped 1 teaspoon Black pepper. Salt to taste. Method: In a large pot add onion, oil and garlic, saute until onion is translucent. Add tomatoes and basil and stew until tomatoes break down, simmer for 30mins, stirring occasionally so the bottom of your pot doesn't burn. Once Cooked season to your liking and put through a passata attachment on your kitchenaid (or blitz in a food processor and strain). Let cool. Bottle mixture and keep in the fridge.
