15 Large tomatoes, halved
1 Large Red onion, chopped roughly
2 tbls Olive oil
4 garlic cloves, chopped
Handful Basil, chopped roughly
Handful chives, roughly chopped
1 teaspoon Black pepper.
Salt to taste.
In a large pot add onion, oil and garlic, saute until onion is translucent. Add tomatoes and basil and stew until tomatoes break down, simmer for 30mins, stirring occasionally so the bottom of your pot doesn't burn. Once Cooked season to your liking and put through a passata attachment on your kitchenaid (or blitz in a food processor and strain). Let cool. Bottle mixture and keep in the fridge.
