Ingredients
50 g Plain flour, plus more for flouring 30 g Parmesan cheese, cut in pieces (3 cm) 30 g White bread, torn in pieces 20 g polenta 400 g Basa fillets, skinless, boneless or other preferred fish 2 pinches fine sea salt 2 medium eggs, beaten with 1 tsp water Method Line a baking tray with baking paper, set aside. Place a plate on the thermomix mixing bowl lid, weigh flour onto it then set aside. Place cheese and bread in mixing bowl then chop 10 sec/speed 8. Add polenta and mix 5 sec/speed 3. Transfer to a small bowl and set aside. Place fish and salt in mixing bowl then chop 10 sec/speed 5 With very well floured hands, take golf ball sized amounts of fish and shape into fish or rectangles (i used a cookie cutter) and place on your lined baking tray. Dust fish in flour, dip in egg mix then coat in reserved breadcrumbs and put back on your tray. Cover and refrigerate until ready to bake. Pre-heat oven to 180'c. Cook fishes in the oven for 15mins or until golden brown and crisp. Serve immediately.
