oil, for greasing 1500 g Water 4 whole Cloves 50 g Malt vinegar 900 - 1200 g Corned beef silverside 400 - 500 g Sweet potato, peeled and cut into pieces 150 g frozen Peas 150 g frozen Corn kernels 100g frozen Green beans Cheese sauce 30 g unsalted butter 30 g plain flour 300 g milk ½ - 1 tsp salt, to taste 1 tsp wholegrain mustard 50g Cheese,grated Method Brush Varoma dish with oil and set aside. Place water, cloves and vinegar into mixing bowl. Place prepared Varoma dish into position and weigh beef into it, ensuring beef fits comfortably and lid closes securely. Secure Varoma lid and cook 60 min/Varoma/speed 2. Set Varoma aside. Insert simmering basket into mixing bowl and weigh sweet potato into it. Place Varoma back into position. Weigh peas, corn and beans into Varoma dish around beef. Secure Varoma lid and cook 15 min/Varoma/speed 2. Remove Varoma and check if vegetables and meat are cooked to your liking. If needed, secure Varoma lid and cook for a further 6-10 min/Varoma/speed 2. Transfer corned beef and vegetables into a thermal serving bowl or other large bowl and cover to keep warm. Transfer 100 g of the cooking liquid into a jug and set aside. Discard remaining cooking liquid. Cheese sauce Place all sauce ingredients except cheese, plus 100 g reserved cooking liquid, into mixing bowl and cook 7-9 min/90°C/speed 3 add cheese and mix 20sec/sp4. Serve hot with meat and veg.
